This recipe has no added sugar:

This year I’ve decided to omit added sugar from my diet. I went years with eating no sugar, but breastfeeding, sleepless nights, and peanut butter cookies got the best of me a bit last year. Processed sugar is so bad for you. It causes inflammation, lowers your immune system, and lots more!

In the past, we were always just afraid of the calories and the fact that sugar gets converted almost directly into fat within our bodies. Little did we know until recent years the detrimental effects processed sugar can have on us.

I’ve read some great information lately about the effects of processed sugar in our bodies. I even came across really great and manageable sugar detox advice that you’ll love if you’re struggling in taking that leap.

When looking to eliminate sugar you HAVE to substitute!

This recipe for chocolate peanut butter energy bites is loaded with dark chocolate, coconut oil, molasses, and honey. These superfoods are vitamin rich, filling, and so satisfying.

You will have trouble not scarfing down the whole plate! This recipe is gluten free, added sugar free, and loaded with healthy fats and protein. They are the perfect snack between meals, after a workout, or to your energy to keep up chasing after the kids!

I really can’t even begin to describe how satisfying these energy bites turned out. With every bite your senses are overwhelmed with bits of peanuts, chunks of chocolate, and healthy sweetness. You really will love to try them out! A-mazing.

This recipe makes 16 small energy balls. Each one has: 158.5 calories, 11.3 grams of fat, 7 grams of carbohydrates, and 9 grams of protein. If you decide to make larger energy bites the macros would be different but the macronutrients for the entire recipe are as follows: 2536 calories, 180.7 grams of fat, 111.2 grams of carbs , and 144.4 grams of protein. Personally I was pretty suprised the carbohydrate count was so low on these! Even less guilt, yummy!

Dark Chocolate Chunk Peanut Protein Bites

Ingredients:

  • 1 1/2 cup Quick Oats
  • 1/4 cup Baking Cocoa Powder
  • 1/4 cup Unrefined Coconut Oil
  • 1 oz. Unsweetened Baker’s Chocolate
  • 1/8 tsp. Cinnamon
  • 1/2 cup roasted (or raw) unsalted peanuts
  • 1/2 cup Chunky Natural Peanut Butter
  • 2 tbsp. Raw Unfiltered Honey
  • 2 tbsp. Molasses

*I just made these again using Hershey’s Special Dark Cocoa and it was even more delicious! You should definitely give that brand of baker’s cocoa powder a try!*

Directions:

1. Soften the coconut oil. It’s best to do this over the stove but if you’re in a rush the microwave will work as well. I do try to avoid using the microwave to heat the foods I’ve paid more for the know they are unrefined at fear of just breaking down the healthy properties of them utilizing a faster heat source. I place the entire glass jar in a pot of boiling water for a minute.

2. Next add in the oats, cocoa powder, cinnamon, honey, and peanut butter to the coconut oil. Mix until fully incorporated. You will end with a thick chocolatey goodness.

3. Chop the Baker’s Chocolate Bar into small chunks. You are basically making your own chocolate chips sans sugar. If they are too big you will get a really bitter bite in your chocolate peanut butter protein balls, but if they are too flakey they blend in too much with the mix.

4. Add in the peanuts and chocolate chunks and stir until fully incorporated.

5. Form small balls by rolling the mix in your hands and place on a plate.

6. Put the plate into the fridge for 1 hour and then transfer the chilled energy bites to a container. Continue to store in the fridge to keep the coconut oil firm.

Aren’t these chocolate energy bites unbelievably simple?

They are the richest protein energy balls I’ve created thus far and I call them the Death By Chocolate Energy Balls.

The tasty ingredients in these protein bites remove free radicals and improve heart health (dark chocolate), increase good cholesterol while lowering bad as well as improve brain function (coconut oil), are anti inflammatory and combat multiple illnesses (cinnamon).

As if you needed more reasons to scarf these down.
