How to Make This Easy Avocado Salad
What I love about this salad is how easy it is to put together and how vibrant it looks. More natural colors in our food means a more broad spectrum of nutrients, and this literealy only takes about 10 minutes to make!
First of course, wash all the produce. Then simply cut the cucumber in quarters lengthwise and then dice and add to a bowl.
Half the cherry tomatoes and add to the bowl. Peel and dice the avocados and add to the bowl. Thinly slice the red onions then add to the bowl. Quarter the cucumbers and then slice them about 1/2 inch thick. Add those to the bowl as well.
Juice the lemon and sprinkle over the ingredients. This is really helpful because it helps the the avocados to oxidize less quickly.
Drizzle the olive oil over the ingredients the ingredients. Then season everything with salt and pepper. Mix until well combined and then serve chilled. Sometimes I like adding chopped up cilantro to this recipe or some fresh corn cut off the cob depending on what I’ve got in the fridge.

Ingredients
- 2 avocados
- 1 lbs. cherry tomatoes
- 1 English cucumber
- ½ red onion
- 1 lemon, juiced
- 1 tbsp olive oil
- Salt, to taste
- Black pepper, to taste
Instructions
- Wash all the produce
