I love my slow cooker. I also adore soup and it’s health benefits. Seriously, it is my favorite food. The options, tastes, and textures are endless! It’s a fast and easy way to get loads of real foods and all the different vitamins they include in one bowl. Not to mention they taste amazing and fill you up without feeling bloated. Unless of course you tend to go back for bowl after bowl… guilty!
Everyone starts thinking about using that slow cooker once fall hits. How could you not? The days become busy, shorter, and colder.

I’ve already got an absolutely amazing Slow Cooker Soup Roundup that definitely compliments those on this list. BUT I haven’t created any exclusively vegetarian roundup yet so thought it to be the perfect time.
I LOVE vegetarian dishes. I’m not vegetarian but well over 90% of my diet is, my favorite foods all just happen to be plants! My husband is my polar opposite carnivore, with the kids settling between us both. (Definitely closer to his side though!)
