They have the texture and taste of Reese’s peanut butter cups but are sugar-free and are raw and gluten-free. This no bake energy bites recipe with chocolate and oatmeal flour is one you will go to time and time again.

For this recipe I was curious if you could make a healthy, protein packed, sugar free, satisfying energy ball similar in taste and texture to Reese’s Peanut Butter Cups. After all, they ARE my favorite candy.

Guess what? They turned out amazing! These no bake energy bites are perfect for busy mornings, after a workout, or to end a meal. In fact it’s extremely hard not to sit down and eat all of these chocolate peanut butter protein energy balls in one sitting.

What is an energy bite?

Energy bites or energy balls are typically a no bake creation based around oats. Oats do not contain gluten but are often processed in factories that do so if you are sensitive you can easily find gluten free oats to complete this recipe with.

What’s In These Dark Chocolate Peanut Butter Energy Bites?

These delicious little morsels are the absolute smoothest energy bites I’ve ever tasted. Why? Because I used oatmeal flour instead of oats to attempt to recreate a peanut butter cup texture.

You can either pick up some awesome ready-made oatmeal flour or you can do as I do and make your own for pennies! I use my favorite kitchen appliance: my Nutribullet. I use it multiple times a day for smoothies, homemade gluten-free flours, and much more! I literally had to buy more cup attachments to go with it because I was using it for so many things.

For a great way to utilize your Nutribullet you can make your own gluten free flours like the oat flour that this recipe calls for or the garbanzo bean flour that thickens my Carrot Ginger Detox Stew!

I was just amazed the first time I threw dry beans right out of the package into that thing and ended up with a powdery flour in under a minute! It’s also great to grind rice, other beans, and sugar!

How Did I Make the Dark Chocolate Shell?

The dark chocolate shell encasing the tasty peanut butter oatmeal protein packed center is made using only baker’s cocoa powder, coconut oil, and honey! You can make your own chocolate shell to create your own completely healthy, added sugar free chocolate candies; or pour it over ice cream for a magic crackle shell; or even easily create guilt free frozen chocolate bananas with ease.

Now that you have the breakdown of this unique energy ball (at least I haven’t found anything like it as of yet), why don’t we get into the recipe?

Chocolate Peanut Butter Cup Energy Bites

INGREDIENTS:

Peanut Butter Oatmeal Center:

  • 1 cup Oatmeal Flour
  • 1/8 cup Organic Unrefined Coconut Oil
  • 4 tbsp. Raw Unfiltered Honey
  •  1/4 cup Natural Peanut Butter (I used chunky but smooth I’m sure turns out just as good)

Dark Chocolate Shell:

  • 3 tbsp. Baker’s Cocoa Powder
  • 1/4 cup Organic Unrefined Coconut Oil
  • 1 tbsp. Raw Unfiltered Honey

Yield: For now I’m going to say 12 energy balls. An awful lot of taste testing went into these and when we make the recipe again I’ll update the quantity.

 

DIRECTIONS:

1. Warm your coconut oil until melted. I do this in a pot of boiling water as to not break down any of the healthy properties of the raw coconut oil I pay extra for! If you are in a rush feel free to use the microwave if you must. Or maybe you’re lucky enough to live where your coconut oil rarely hardens!

2. Add the oatmeal flour, peanut butter, honey, and coconut oil in a medium sized bowl and mix until well incorporated.

3. Form small balls tightly compacted using the peanut butter protein packed filling.

4. Now comes the fun part! In a small bowl mix together the additional coconut oil, honey, and cocoa powder until no clumps remain. We actually had quite a bit of the chocolate shell left over. We placed it in silicone molds in the freezer and made our own homemade chocolate bars!

5. Roll the peanut butter balls in the chocolate mixture until thoroughly coated and transfer with a spoon to a plate. You can cool the energy balls once covered in chocolate in the refrigerator and roll them a second time in the chocolate mixture if you’d like. And if you can wait that long to try them!

6. Place your plate of peanut butter cup energy balls into the fridge to cool and harden. After 30 minutes to 1 hour remove them from the plate using a spatula and transfer to an airtight container to store in the fridge.
