It’s the perfect time of year to bring out the slow cooker and make some delicious and healthy vegetable slow cooker soups. There are seemingly endless options of colors and combinations when creating a soup recipe. Which is why it’s one of my favorite foods.

I adore my slow cooker. I also love soup and it’s health benefits. With so many choices of ingredients and spices to mix up and slow cook together:

Crock-pot soup is a fast and easy way to get lots of real foods and all the different vitamins they include in one bowl. Not to mention they taste amazing, can be very filling without leaving you bloated, and soup digests easily.

Everyone starts thinking about using that slow cooker once fall hits. How could you not? The days become busy, shorter, and colder.

Is homemade vegetable soup healthy?

Homemade vegetable soup is extremely healthy! The larger the variety of natural whole foods that you can get into one serving the better! Different types and colors of whole foods contain different nutrients. In a veggie soup you can mix together almost any variety of your favorite vegetables, legumes, and even fruits for a healthy home cooked meal all in one pot.

How do you make healthy vegetable soup?

Healthy vegetable soup can easily be made over the stove top or crockpot. Cube, dice, or mince fresh (or even canned) vegetables into your pot. Add in fresh or dried seasonings. Cover with a base of buillion, broth, stock, or pasta sauce and cook until all ingredients are soft.

What spices to put in a vegetable soup?

When creating your own spice mix for a vegetable soup there are some spices that flavor almost any veggie soup well.

  • sea salt
  • pepper
  • bay leaves
  • parsley
  • garlic powder
  • onion powder
  • sage
  • oregano

I add these flavorful spices to almost every home made healthy vegetable soup we create at our house! Don’t be afraid to try something new.

Some other delicious flavor options to add in addition to those listed above are: cumin, chili powder and paprika for a southwestern flavor mix.

Another idea is adding basil, rosemary, and thyme for a Italian flavored slow cooker soup.

This healthy slow cooker soup recipe is loaded with nutrients, flavors, colors, antioxidants, and spices.

  • Bright orange carrots are packed full of vitamin A.
  • The bright yellow nutritious corn is full of fiber which aids in digestion. Plus corn contains 10% DV of each folate, thiamin, magnesium, phosphorus, and vitamin C.
  • Cooked cabbage, carrots, garlic, and onion are all great for detoxifying your body. This is a wonderful detox soup because it is loaded with so many healthy detoxifying vegetables.

How easy is this slow cooker soup recipe?

This is going to become a new favorite dinner recipe for every busy mom out there! Half of the ingredients are canned and the other half should be diced fresh.

This is the definition of a dump and go soup recipe. You can get it ready in the morning before your busy day (or even prepped the evening before). When you return home in the evening you will have a flavorful and nutritious soup the whole family will enjoy.

  • or switch to warm


Feel free to spend an extra hour at the park or stay late for that soccer game. And STILL be confident that you are returning home to a perfectly cooked healthy homemade meal in your Crock-Pot.
