How to Make a Keto Blueberry Mug Cake
Making a keto blueberry mug cake is so ridiculously easy that it literally takes 3 minutes from start to finish. The most complicated and time-consuming part about the entire recipe is taking out all the right ingredients. It’s that easy.
You’ll need coconut flour, stevia in the raw sweetener, baking powder, an egg, avocado oil, vanilla extract, fresh blueberries, cream cheese, and a microwave-safe mug.
Making this low-carb mug cake recipe is basically just as simple as mixing all of these together in a bowl and then pouring it into the mug.
I’ve found that it works best to first add in the wet ingredients and whisk them. Then add the dry into the same bowl and whisk them in. Finally, you add in the softened cream cheese and blueberries and you guessed it: whisk them in as well.
From that point, you pour the mug cake batter into a microwave-safe mug or tiny Corningware dish (if you didn’t just make it in there in the first place). Pop it in the microwave and let your tasty treat bake. It only takes about 2 minutes to make.
Cook it for one minute and check its doneness. Cook it for either another minute or in 30-second increments at this point until the center of the top of the cake is cooked.
If you are following a low carb diet I cannot say enough good things about mug cakes and fat bombs. They are the key components to helping to keep you from feeling deprived or like you’re missing out when following such a restrictive diet.

Ingredients
- 2 tablespoons of avocado oil
- 1 EB egg
- 1 teaspoon of baking powder
- 1/2 teaspoon of vanilla extract
- 1/4 cup of unsweetened almond milk
- 3 tablespoons of stevia in the raw
- 1/4 cup of coconut flour
- 2 ounces of cream cheese (softened)
- 1/4 cup of blueberries
Instructions
- First, add all the wet ingredients to a bowl then whisk them together.
