Pumpkin Cookies are the Best!
Actually, I strongly believe that pumpkin everything is the best! As soon as pumpkins are in the grocery stores it’s safe to say my family is buying 2 every shopping trip!
Two kids, two pumpkins every week right? Next year it’s safe to say we’ll be buying 3 pumpkins every time we shop because I’m due with our third in just a few weeks!
Yes, we may go a bit overboard with the pumpkins, but they definitely do not go to waste! I let the kids carve them up and instead of scrapping just the slime out of every pumpkin, I scrape out almost all of the meat too! Even each jack-o-lantern pumpkin has at least 2 or 3 cans worth of pumpkin puree just waiting to come out!
Then I boil it, bake it, can it, freeze it. Anything I have to do so that we have pumpkin all year round! I use it every single day this time of year to make pumpkin everything!

How This Perfect Pumpkin Cookie Recipe Came to Be
As I mentioned before, I’m pregnant! Which means I want lots of yummy healthy treats on hand at all times so that I don’t feel like indulging in all the sugary junk.
So with a bunch of pumpkin puree that needed to be used up one morning, I was ready to start a home-ec project with the kids and bake some healthy pumpkin cookies!
We took to Pinterest and did a few searches and I did not like one recipe I found.
I was quite disappointed. I was looking for an easy recipe that was healthy too and was shocked that nothing was coming up in the top results that fit that need.
So…
I decided to make one up.
And they turned out delicious!
How to Make These Easy Peasy Pumpkin Cookies
I don’t even have too many tips to share about making these cookies because they are so simple.
This is a one-bowl recipe. Add the pumpkin puree, eggs, molasses, peanut butter, old fashioned oats, baking soda, and stevia in the raw and mix well.
The stevia I used is the fluffy one that comes in a giant bag with the texture of Splenda. It measures cup for cup with sugar and is the simplest healthy sugar replacement with baking for that reason.
Scoop by heaping tablespoon onto a greased cookie sheet or one lined with aluminum foil. Press the cookies flat and bake at 350 degrees for 10-15 minutes.
Just be sure not to overcook them! You still want these easy pumpkin cookies a little soft when you take them out.
Ingredients
- 1 cup pumpkin puree
- 2 eggs
- 1 large squirt of liquid stevia (OR 2 tbsp molasses if sugar is ok)
- 1/4 cup peanut butter
- 2 cups old fashioned rolled oats
- 1/2 tsp. baking soda
- 2 cups stevia in the raw
Instructions
- Add all ingredients into one bowl and mix well.
- Add to greased cookie sheet by heaping tablespoon and flatten.
- Bake at 350 degrees for 10-15 minutes.
