This Keto pumpkin bread with coconut flour recipe is low carb, gluten-free, sugar-free, and paleo and sure to become one of your new favorites this season.

The answer is a resounding YES! An entire cup of canned pumpkin contains only 8g carbohydrates and 30 calories! This was really exciting to me because the proposition of missing out on all things pumpkin and pumpkin spice would really put a damper on my holidays!
Plus this low carb pumpkin bread is good any time of year. But who doesn’t have some pumpkin on hand right now? Goodness knows I spent yesterday baking, pureeing, and canning pounds and pounds of pumpkin! I think I’m halfway ready for the season now! This recipe is great with either canned OR fresh pureed pie pumpkins.

- unsweetened vanilla almond milk
- eggs
- avocado oil or coconut oil
- cinnamon
- pumpkin spice
- liquid stevia

Fall into Delicious Coconut Flour Pumpkin Bread
With the holidays nearly upon us, and the air getting more crisp and cool every day, let’s pumpkin spice our world! This Keto pumpkin bread recipe is perfect for breakfast, snack, really any time of day. It is rich and dense and just pumpkiny enough to quench that fall craving while adhering to your Keto or Paleo diet.
This is a mouthwatering recipe the whole family will gobble up. It contains no sugar and yet is perfectly sweetened with stevia extract.
My daughter (who baked tonight’s batch with me) was shocked that she’s been wolfing down pumpkin bread with almond milk in it! (She didn’t even realize the flour we were adding was coconut flour… yet.) I plan on getting her really hooked on this coconut flour pumpkin bread before she even realizes!
This Keto pumpkin bread recipe is really simple. No fancy mixing and adding. You simply mix together all the liquid ingredients. Then add in the coconut flour which takes about 5 minutes to fully absorb the liquid and thicken up.
Even while it absorbs you can mix in the heavenly fall spices and stevia to make a ridiculously simple sugar free recipe!
If you are new to using coconut flour in your recipes it might be a bit surprising at first. It is light and flaky but when mixed with liquid, the coconut flour readily absorbs it. Coconut flour takes a little time to fully thicken. It will resemble a very dense cake batter when ready to put into the pan. This coconut flour pumpkin bread will look like the image below when it’s fully absorbed and ready to bake!

Ingredients
- 1 1/2 C. Pumpkin Puree
- 1 C. Coconut Flour
- 8 Eggs
- 2 Tsp. Pumpkin Spice
- 2 Tsp. Cinnamon
- 3 Tbsp. Coconut or Avocado Oil
- 1 C. unsweetened Vanilla Almond Milk
- 4 Squeezes of Liquid Stevia Leaf Extract
Instructions
- Preheat your oven to 375.
- Mix together the wet ingredients: eggs, pumpkin puree, almond milk, and oil.
- Add in the coconut flour. Stir until thoroughly mixed in.
- Add in the spices and stevia extract to taste. When using from a squeeze bottle version, I find 4 big squeezes to be perfect.
- Allow the coconut flour to fully absorb the liquid ingredients. (About 5 minutes.)
- Grease a baking loaf with butter or oil.
- Pour the keto pumpkin bread mixture into the baking pan. Place on the middle rack of your oven.
- Cook for 35-50 minutes. Until the top of the low carb pumpkin bread is browned and crispy, but not burnt.
