This dinner recipe is exactly what you are looking for as a busy mom this time of year. The prep time is really fast at under 10 minutes, with only 30 minutes of total cook time. How I Get Started with This Fast Healthy Homecooked Dinner

When pressed for time on a busy day of momming I turn to my fridge, freezer, pantry, and Walmart for dinner. Running to the store for food for my family is always a bit of an escapade.

My family eats A LOT, it’s quite amazing actually. Between my husband, myself, and 2 little girls we eat like a voracious pack of wolves. Every checker is astounded at our small family and our overflowing cart every single time.

So our favorite one-stop-shop is of course Walmart. Where I know I can get everything really fast in one place, no price matching required because I know the price is already the best.

Huge evening shopping trips mean a super fast healthy homecooked dinner that night.

Every time we have a busy shopping trip I know I have to rush home and quickly put together some of the ingredients I picked up that night into a quick, delicious, and healthy dinner for my family who is always starving by the end of the shopping trip.

I always make sure to pick up at least one Smithfield Marinated Fresh Pork on shopping trip days.

The marinade alone sparked a creative fall meal in my mind so I was sure to grab a few more fall favorites to tie in with it on my Walmart shopping trip like cinnamon and Honeycrisp apples.

How fast is this fresh family dinner recipe?

This meal can be done in 35 minutes. Which is pretty much always my goal with dinners. Unless we are having a meal that is a fun family experience: involving the kids in measuring, mixing, baking, and cooking; then speed and ease are always on my mind.

I absolutely adore cooking, but in the evening I’m tired, I’m hungry, and somehow the kids still always have enough energy left for another excursion. 

So putting together a fresh homecooked meal in about 30 minutes is always my goal. When you have pre-marinated pork on hard with real fresh ingredients, a 30-minute dinner goal is completely achievable every time!

Especially when you take into account that these pork loins are so versatile there are even faster ways to prepare than oven roasting. By slicing or dicing your loin before cooking, you can easily cut the cook time in half for a really quick but healthy dinner if you needed to!

 

Smithfield Applewood Bacon Loin Filet over Cinnamon Sauteed Brussel Sprouts, Apples, and Quinoa

 

Ingredients:

  • 1 Smithfield Applewood Bacon Loin Filet
  • 1 pound brussel sprouts
  • 2 large Honeycrisp apples
  • 2 cups of quinoa
  • 3 tablespoons avocado oil
  • 1/4 teaspoon cinnamon
  • 1 packet of stevia sweetener

 

DIRECTIONS:

1. Preheat the oven to 400 degrees. Place the pork loin bacon side up (that’s right, it’s ACTUALLY  crusted in real bacon pieces and it’s perfectly amazing) in a pyrex baking dish. Once preheated insert the dish into the oven for about 30 minutes. No need to cover or foil wrap, this quick and easy pork loin will turn out perfect. 

2. Bring 8 cups of water to a rapid boil in a pot on the stove. Once boiling add in quinoa, stirring occasionally. Cook 12-15 minutes and then strain off the excess liquid.

3. Ready for the hardest part? (Gotcha, it’s not hard at all!) Halve the brussel sprouts and dice the Honeycrisp apples. You can use any type of apple you like really, but after moving to Washington for 3 years, we became completely spoiled by the amazing Honeycrisp apples there and are still hooked! They really are the best.

4. Add the brussel sprouts and apples to a large skillet with 3 tablespoons of avocado oil. Sprinkle with cinnamon and stevia and sautee for 10 minutes. Remove from heat and allow to cool. Right about this time, the quinoa will be done too and before you know it you’ll be pulling the pork out!

5. When the pork reaches an internal temperature of 150 degrees, pull the pork loin out of the oven and allow to rest for 3 minutes before slicing it up so it can fully cook as it cools.

Now you’ve completed a fast and fresh homecooked family meal in only 30 minutes!

Serve this dish with a large scoop of quinoa, covered in a heaping amount of cinnamon sauteed brussel sprouts and apples, and some bacon crusted pork slices on top.

The decadent fall flavors blend perfectly together. This is one of those meals (much like Thanksgiving) where I want a little piece of everything in the same bite. The flavors complement each other so well they really should be mixed!

I was really surprised how filling this is! 

Every member of our family had different favorites in this dish. My husband’s favorite hands down was the Smithfield Marinated Fresh Pork, we ended with about 3 slices left after dinner. (I told you, we eat a lot!) My littlest adored the quinoa mixed with the brussel sprouts. My eldest and I couldn’t get enough of the sauteed apples mixed with the pork.
