A Homemade Cooling Tropical Treat the Family

When I first whipped up a batch of these healthy pineapple coconut lime popsicles, I had visions of my kids instantly declaring them the best treat ever.

But let’s just say it didn’t quite go that way. The tangy lime and pineapple texture threw them off a bit. However, after a particularly sweaty afternoon of bike rides and backyard adventures, those same skeptical kids suddenly couldn’t get enough.

It turns out that when you’ve been running hard and the summer sun is sizzling, a little tropical tang hits just right!

Simple and Naturally Delicious Coconut Lime and Pineapple Homemade Popsicles

These popsicles couldn’t be easier to make. I blend fresh pineapple, creamy coconut milk, a splash of zesty lime juice, and just a drizzle of raw unfiltered honey for a touch of sweetness.

Then I pour the mixture into molds, freeze them for a few hours, and voilà — a healthy, refreshing treat! No artificial colors, flavors, or sweeteners required! Which is what really got me to jump off our massive Otter Pop consumption train and try out some new delicious homemade popsicle recipes!

How to Make Homemade Pineapple Coconut Lime Popsicles

Ingredients:

  • 1 fresh ripe pineapple
  • 1 can coconut milk
  • 1 lime, juiced
  • ¼ cup raw unfiltered honey

Instructions:

Peel and core the pineapple, then cut in smaller pieces, so it fits the blender. 

In the blender, add the cut pineapple, can of coconut milk, the juice of 1 lime and honey.

Blend until smooth. Depending on the type of blender you use you might need to pulse it and use a spoon to move the pineapple chunks away from the blade a few times. When I had a Ninja Blender this was unnecessary and there were no chunks, but now that we had replace our house and everything in it due to a toxic mold situation, I’ve got a cheap one that requires a bit more hands on.

Divide the pineapple juice over your popsicle mold. If you don’t have one already you can get awesome 12 popsicle molds to make a lot at once or smaller sets if you’ve got a small freezer, less kids, or like trying new popsicle flavors often this 6 popsicle mold works perfectly.

Place a popsicle stick in each popsicle. (Most sets come with sticks that pop on and snap down but regular popsicle sticks work too!)

Freeze for at least 6 hours and enjoy!
