These cucumber rolls bring the delicious flavors of your favorite bagel with cream cheese and everything seasoning without all the carbs and white flour that the bagel itself has.

Step-by-Step How to Make Low Carb Everything Bagel Cucumber Rolls
Start by slicing the cucumber lengthwise into thin strips using a mandoline or a vegetable peeler. This is the toughest part of the entire recipe and just takes a little patience. It’s also ok if not every slice is perfect, you’re going to layer them all together to make a big sheet of cucumber in a bit.
Layer the cucumber slices over each other and pat dry with paper towels.
Add the cream cheese and spread it out over the cucumbers. If you are having trouble spreading it you can microwave it a bit. Only do 10 seconds at a time and remember to cover it because it WILL pop and make a mess of your microwave.
Sprinkle a generous amount of everything bagel seasoning over the cream cheese.
Place a thin layer of smoked salmon on top. Then sprinkle on the fresh dill. If you don’t have fresh dill that’s ok, these are great without it too. But it does add an extra layer of delicious to them
Carefully roll up each cucumber strip. Then slice into bitesize rolls. Be sure your knife is super sharp or it’s going to make a mess of all your beautiful prep work.
Refrigerate for at least 30 minutes to allow the flavors to meld. If they sit longer that’s ok too, you can even make these the day before your party and they will be delicious.
