Peppermint Dark Chocolate Cheesecake Fat Bombs for the Holidays
We are heading into Christmas unbelievably fast! My favorite flavor to incorporate into everything in fall is pumpkin spice. I adore healthy pumpkin spice desserts. (In fact they make their way into my life almost year round.)
But in December my world is overwhelmed with peppermint. I love indulging in all parts of the holidays. The food, the music, and the desserts.
But when you’re a healthy fit mom it can be tough to indulge in a healthy way. You need the right recipes to feel like you’re never missing out!
There is no need to eliminate your favorite foods to stay within a healthy diet or a low carb or Keto diet. You just need a good ingredient replacement guide (I’ve got one available totally free), and a little creativity.
What are Low Carb Keto Fat Bombs?
One of the most amazing things about the Keto Diet are fat bombs. On a Ketogenic (or low carb high fat, HFLC) diet you are restricting your carbohydrate intake and replacing it with healthy fats.
When you are consuming very little carbohydrates (about 20 grams a day) your body switches gears completely to burning fat for fuel instead of burning carbohydrates. This switch in energy production is what we call Ketosis.
Ketosis has a multitude of health benefits. It is most popular though for its ability to help you lose weight rapidly. When in a state of Ketosis you body is not only burning the fat you consume for energy. It also will begin utilizing your stored fat for energy as well. Literally burning off your stored fat as fuel.
While it may sound like a miracle diet, the Ketogenic Diet can be very hard to follow. Keto is extremely restrictive and eliminates many foods. To combat the feeling of deprivation that ensues, fat bombs can quickly become your best friend.

A fat bomb is essentially a delicious, usually sweet (occasionally savory), high fat mouthful of deliciousness. Fat bombs typically contain coconut oil, cocoa, cream cheese, nut butter, or butter. Or some mixture of those ingredients.

It is far too easy to cheat on a Keto Diet without the perfect Keto snacks on hand at all times and fat bombs in the fridge.

Tips for Making HFLC Dark chocolate Peppermint Cheesecake Fat Bombs
These decadent fat bombs involve a few extra steps than some of my other fat bomb recipes, but they are my no means time-consuming to make!
You will need 2 bowls to prepare this dish. The first will create the rich cheesecake portion. The second bowl will mix up pure dark chocolate peppermint deliciousness.
When melting the ingredients you can choose to use the microwave or stove top. The microwave may break down some of the health properties of the unrefined coconut oil. However, when I need to refill my stash of fat bombs to stay within my Keto Diet without feeling deprived, even I succumb to using the microwave occasionally.
There is an additional ingredient in these fat bombs that you can omit without detracting from the taste! The coconut flakes (dyed red) are completely optional. However, they do make the fat bomb so much more beautiful and really make them feel like Christmas.
How to dye coconut flakes
To dye coconut flakes is very simple. Insert your desired amount of unsweetened coconut flakes into a plastic baggy. Add a few drop of food coloring. Seal the plastic bag and manually incorporate the ingredients. The dry coconut flakes readily absorb the food coloring. You may need to even add more than you think.
Coconut flakes are optional in this fat bomb recipe. But it adds a bit of festivity to the dish! Let’s enjoy a low carb Christmas with healthy utter indulgence together shall we?

These fat bombs hold perfectly into an ice-cube tray. I happen to have silicone ice-cube trays which are twice the size of a regular ise cube that work perfectly as well. I find an ice-cube try to be a perfect portion control for these fat bombs though. Because as my father said after trying them at Thanksgiving, “I could eat these all day!”
Keep them in the fridge after the initial cooling in the freezer. The cream cheese stays soft with a satisfying crunch from the cooled chocolate. There is not a more beautiful combination of textures and flavors than this decadent fat bomb recipe perfect for Christmas!
The macros for the entire batch is as follows: 2386 calories, 250 grams of fat, 24.6 grams of protein, 41 grams of carbohydrates. If you split the recipe into a full ice cube tray (14 servings) the macros for each cube is 170.4 calories, 18 grams of fat, 1.8 grams of protein, 2.9 grams of carbohydrates.
Ingredients
- 1 8 oz. package full fat cream cheese
- 3/4 c. unrefined coconut oil
- 1 tsp. peppermint extract
- 1/2 c. cocoa powder
- liquid stevia to taste
- 2 tbsp. unsweetened coconut flakes (optional)
- red food coloring (optional)
Instructions
- In a large glass bowl (or over the stovetop) melt an entire 8 oz. package of cream cheese with 1/4 c. coconut oil.
- Whisk together the softened ingredients with 1/2 tsp. pure peppermint extract and a small squirt of liquid stevia.
- Melt the other 1/2 c. unrefned coconut oil and place in a seperate mixing bowl.
- Add 1/2 c. cocoa powder, 1/2 tsp pure peppermint extract, and a large squeeze of liquid stevia to the plain melted coconut oil. Stir until all ingedients are well incorporated.
- If you are choosing to add in the optional festive unsweetened coconut flakes it's time to make those babies! Place the unsweetened coconut flakes in a plastic baggy and add a few drops of red food coloring. Manually mix the two together from the outside of the bag. Continue adding food coloring until you reach your desired color.
- Sprinkle the ice cube tray with coconut flakes.
- Sprinkle coconut flakes into the cream cheese mixture as well. Being careful to fold in softly so the color doesnt bleed much.
- Add the cream cheese mixture to the ice cube trays by heaping spoonfuls. Pat the mixture down flat into the tray.
- Drizzle the chocolate peppermint mixture into the ice cube tray on top of the cream cheese just enough to cover it entirely.
- Allow to chill in the fridge or freezer. Keep in a sealed container in the refridgerator. Enjoy responsibly!

Could you substitute MCT oil for the coconut oil?
Great question Leanne! No, unfortunately, substituting coconut oil for MTC oil in this fat bomb recipe won’t work. The coconut oil has the great quality of being in solid form when refrigerated to help hold the fat bombs together. With MTC oil you’d still get a great flavor, but the fat bombs would remain liquidy.
